However you say it, this stuffed potatoes recipe will have you begging for more.

Loaded with cheese, tomatoes and ground beef, it's bound to be a crowd pleaser.

We're Irish so we love potatoes and these stuffed potatoes are nothing short of amazing.

We would cook them every day if our waistlines would allow it.

Super Stuffed Potatoes

Prep/Total 30 min.


4 small baking potatoes (2 1/4 lb)

1 lb. ground beef

1/4 lb. Pasteurized prepared cheese product, cut into 1/2-inch cubes

1 small tomato, chopped

2 green onions, sliced

1/2 cup sour cream

Makes 4 servings, 1 potato each

Healthy substitutes: Make with lean ground beef or turkey, reduced-fat cheese and Light/Reduced-fat sour cream and/or omit the sour cream altogether.


Poke potatoes in random places with fork. Microwave on HIGH 14 min. or just until tender, turning after 7 min.

Meanwhile, brown meat in large skillet; drain. Return to skilklet, add cheese, tomatoes and onions; cook until cheese is melted and mixture is well blended, stirring frequently.

Split potatoes; mash insides with fork. Top with meat mixture and sour cream.
