This lettuce wedge salad recipe is the simplest appetizer you could serve, yet it has an elegance to it that speaks for itself.
We recommend cutting a head of lettuce into 4 quarters for this recipe, but it can be cut smaller if necessary.
We cut the quarters of iceberg lettuce in half once to serve more guests, and it worked perfectly!

2 large heads iceberg lettuce, cut in quarters
1 cup mayonnaise or Miracle Whip
2 Tbsp. lemon juice
1 Tbsp. grated lemon zest
1 Tbsp. honey
Salt and Pepper
Makes 8 servings, 1 wedge each
Arrange cut wedges on a serving platter.
Drizzle dressing over each and season with salt and pepper if desired.
Serve with extra dressing.
Combine grated lemon zest, lemon juice, honey and salt and pepper in a small bowl. Add 2 Tbsp. hot water and mix well. Add mayonnaise and stir until smooth.
Dressing can be made up to 3 days in advance; just cover and refrigerate.
