With these easy Italian meatballs you may be handing out more than just "seconds" when your guests ask for the recipe.
Prep 20 min. Total 35 min.
2 lb. lean ground beef
1 (6 oz.) pkg. stuffing mix for chicken
(we recommend Stove top)
1 cup water
1 (16 oz.) bottle barbecue sauce (any flavor)
1 (16 oz.) can whole berry cranberry sauce
1 tsp. Italian seasoning
Makes 25 servings, 2 meatballs each
Healthy substitutes: Make with lean ground turkey meat instead of beef.
Heat oven to 400 degrees Fahrenheit.
Line 2 (15x10x1-inch) pans with foil; spray with cooking spray. Mix meat stuffing mix, water, eggs, and seasoning until blended. Shape into 50 -1 1/2 inch meatballs' place in prepared pans.
Bake 15 min. or until done (160 degrees Fahrenheit). Meanwhile, bring barbecue sauce and cranberry sauce to a boil in a large saucepan on medium heat, stirring occasionally.
Add meatballs to sauce; stir to evenly coat. Serve warm.
Make Ahead: Meatballs can be prepared 1 to 2 in advance as directed or make weeks in advance and freeze. Freeze in zip-lock freezer bags and lay flat, so meatballs don't stick together. Thaw in refrigerator for several hours or overnight before reheating in microwave or oven.
