Grilled corn is especially delicious when you add a seasoned or herbed butter to the corn after grilling.

16 ears fresh corn
1/4 lb. (1 stick) unsalted butter, softened
1 Tbsp. grated orange zest
1 Tbsp. grated lime zest
2 Tbsp. lemon juice
2 Tbsp. olive oil
Salt and pepper

Healthy substitutes: Make with extra-virgin olive oil and reduced-fat butter
In a large bowl, combine butter, orange zest, lime zest and lemon juice. Beat with a handheld mixer or wooden spoon until blended. (This butter can be made up to 2 days in advance. Just cover and refrigerate; remove from fridge 15 min. before serving to allow butter to soften.
Soak the whole cobs in a pot of cold water for 15 minutes. Be sure the ears are completely covered with water. This will provide extra moisture for cooking and will steam the corn kernels inside the husks. Prepare a charcoal or gas grill to medium-high heat.
Shuck corn, discarding husks and silk. Brush with a small amount of olive oil and place on hot grill. Cook, turning often, until slightly charred in spots and soft, 5 - 10 min. Sprinkle with salt and pepper. Place corn on a large platter and top with small amount prepared butter. Serve remaining butter on the side.

1/2 cup butter, softened
1/3 cup chopped fresh chives
2 Tbsp. chopped fresh basil leaves
2 Tbsp. chopped fresh oregano leaves

In a small bowl, mix butter, chives, basil and oregano. Cover and refrigerate until ready to serve. (This butter can be made up to 2 days in advance.)
Prepare a charcoal or gas grill to medium heat. Remove all but innermost husks from corn. Fold back inner husks and remove corn silk. Rewrap inner husks around corn. Place corn on grill. Cover grill and cook 10 - 15 min. or until corn is tender and husks are slightly brown. Serve immediately with herb butter.
