This watermelon salsa recipe isn't just served south-of-the-border.
Watermelon is an all-American favorite fruit. We enjoy it all summer especially around the 4th of July.
Though you don't typically hear of it being served in a salsa, if you give this watermelon salsa appetizer a try, you may just get people talking about it for many summers to come.
Prep 15 min. Chill at least 1 hour
Ingredients:
2 cups seedless watermelon, chopped
3/4 cup sweet onion, chopped
3/4 cup canned black beans, drained and rinsed
1/4 cup seeded jalapeno chilies, chopped
1/4 cup fresh cilantro, chopped
1 large clove garlic, finely chopped or 1/4 tsp. garlic powder
1 Tbsp. brown sugar
1/2 tsp. salt
Directions:
In large bowl, combine all ingredients, mix well.
Cover and refrigerate at least 1 hour. Stir before serving.
Serve with crackers, chips or pita chips.
