This sausage stuffed mushrooms recipe is a favorite appetizer for themed parties.

Ingredients:
24 fresh mushrooms (1 lb.)
1/2 cup shredded mozzarella cheese
1/2 cup cooked crumbled Italian sausage
1/4 cup Italian dressing
Makes 12 servings, 2 mushrooms each
Healthy substitutes: Make with Light dressing, turkey sausage and low-fat cheese.
Directions:
Heat broiler.
Remove and discard stems from mushrooms. Brush mushroom caps with dressing; place top-sides down on rack of broiler pan. Broil 5 min.
Press sausage into mushroom caps, adding about 1 tsp. sausage each cap. Sprinkle with cheese.
Broil 3-5 min. or until cheese is melted. Serve hot.

40 fresh mushrooms (2lb.)
1 (10 oz.) pkg. frozen chopped spinach, thawed, well drained
1 (6 oz.) pkg. stuffing mix for chicken (we recommend Stove Top)
1 cup Shredded Mozzarella cheese
1 cup grated parmesan cheese
2 cloves garlic, minced
1 1/2 cups hot water
2 Tbsp. butter
Makes 20 servings, 2 mushrooms each
Healthy substitutes: Make with low-fat mozzarella cheese or only use 1/2 cup cheese
Directions:
Heat oven to 400 degrees Fahrenheit.
Mix stuffing mix and water in a large bowl; set aside. Remove stems from mushrooms; chop stems. Melt butter in skillet on medium heat. Add chopped stems and garlic; cook and stir until tender. Add to prepared stuffing with spinach and cheeses; mix well.
Spoon into mushroom caps. Place, filled-sides up, in shallow pan(s).
Bake 20 min. or until mushrooms are tender and filling is heated through.

2 Tbsp. finely chopped onions
2 Tbsp. finely chopped red peppers
3 Tbsp. butter
14 crackers, finely crushed (about 1/2 cup)
2 Tbsp. grated parmesan cheese
1/2 tsp Italian seasoning
Makes 10 servings, 2 mushrooms each
Directions:
Heat oven to 400 degrees Fahrenheit. Remove stems from mushrooms. finely chop enough stems to measure 1/4 cup. Discard remaining stems or save for future use.
Melt butter in large skillet on medium heat. Add chopped stems, onions and peppers; cook and stir until tender. Stir in cracker crumbs, cheese and seasoning; spoon into mushroom caps. Place on baking sheet filled-side up.
Bake 15 min. or until heated through.
