Enjoy a 4th of July finale in the colors of the flag with this red velvet cake recipe.

This cake is simple to make and will be a huge success to enjoy while watching the fireworks.

There are endless decorating ideas for this red velvet cake.

Red Velvet Cake Recipe

Prep 45 min. Bake 20 min. Cool 40 min.

Ingredients:

CAKE -

1/4 lb. (1 stick) unsalted butter, softened

1 1/2 cup sugar

2 large eggs

2 1/2 cups cake flour

2 Tbsp. cocoa

1 tsp. baking soda

1/2 tsp. salt

1 cup buttermilk

1 Tbsp. white vinegar

2 oz. red food coloring

2 tsp. vanilla extract

FROSTING -

2 (8 oz.) pkgs. cream cheese, softened

1/2 lb. (2 sticks) unsalted butter, softened

2 (16 oz.) boxes confectioners' sugar, sifted

2 tsp. vanilla extract

Makes 12 servings

Healthy substitutes: Make with reduced-fat or Light butter and reduced-fat cream cheese

Directions:

Make Cake: Preheat oven to 350 degrees Fahrenheit. Grease and flour 3 (8 in.) cake pans.

In a medium bowl, beat butter and sugar with an electric mixer at medium speed until creamy. Beat in eggs, one at a time. In a separate bowl, mix dry ingredients. In another bowl, combine liquid ingredients.

Beat half of dry flour mixture into butter mixture. Stir in liquid buttermilk mixture and then stir in remaining flour mixture. Divide batter into prepared pans.

Bake until a tester inserted into center of cake comes out clean; about 17 min. Cool on a rack for 10 min. Turn out cakes and cool completely.

Make Frosting: Beat cream cheese and butter with electric mixer at medium speed until smooth. Add sugar and vanilla and beat until fluffy.

Place a cake layer on a platter. Frost top, top with cake, frost and repeat. Then frost sides.

Decorating Ideas:

1- Take red, white and blue star-shaped sprinkles and line bottom border of cake at platter. Take red licorice (Twizzlers or Red vines) cut to size and line side of cake all the way around about 1/2 inch apart. Top cake with red or blue M & M's at tips of licorice; then sprinkle top of cake with star-shaped sprinkles.

2 - Decorate with red, white and blue candy balls at bottom border of cake at platter. Top with same candy in middle and 2-3 American flag toothpicks.

3 - Make or buy small-medium star-shaped cookies decorated in red or blue and place all-around side of cake about 1 inch apart. Decorate top of cake with 2-3 star cookies standing up, then line top and bottom border of cake with red and/or blue M & M's.
