Easy Pasta Salad

Prep 20 min. Cook 20 min.

Ingredients:

1 (8 oz.) box of bow tie or tri-color rotini pasta, cooked

2/3 cup Italian dressing

1/3 cup shredded Parmesan cheese

Makes 8 servings

Healthy substitutes: Make with Light dressing and reduced-fat cheese

Directions:

Prepare pasta as directed and cook until al dente. Toss to coat with dressing and top with cheese.

The great thing about these pasta salad recipes is the range of add-ins you can use. You can add grilled chicken, cubed ham, shredded crabmeat etc. Tomatoes, black olives, peppers and more can be added as well.

Make Ahead: Pasta recipe can be prepared 1-2 days ahead of time. Top with cheese just before serving.

Pesto Pasta Salad Recipe

Prep 15 min. Cook 12 min.

Ingredients:

SALAD

1 lb. gemelli pasta or other short pasta

1 cup plain Greek yogurt

2 pints cherry or grape tomatoes, halved

PESTO

3 cups packed fresh basil

1 cup packed fresh parsley

3 garlic cloves, chopped

1 Tbsp. lemon juice

1/2 tsp. salt

1/4 tsp. pepper

1/3 cup pine nuts, toasted (optional)

1/2 cup olive oil

1/2 cup grated Parmesan cheese

Makes 8 servings

Healthy substitutes: Make with 2% Greek yogurt, extra virgin oil and reduced-fat Parmesan cheese

Directions:

Make Pesto: In food processor or blender, puree basil, parsley, garlic, lemon juice, salt, pepper and pine nuts (optional) until smooth. With motor running, add olive oil and process until a thick paste forms. Add Parmesan and pulse twice. Season with more salt and pepper, if desired.

Make Salad: Cook pasta according to package directions until al dente. Drain and run under cold water to stop cooking.

In a large bowl, combine pesto and Greek yogurt and stir until well blended. Add cold pasta and toss to coat with dressing. Top with tomatoes. Serve at room temperature or cover and refrigerate to serve chilled.

Greek-Style Pasta Salad Recipe

Prep/Total 30 min.

Ingredients:

SALAD

8 oz. uncooked rotini pasta

4 oz. hard salami slices, quartered

1 medium cucumber, seeded, cut into chunks (1 1/4 cups)

1 small green bell pepper, cut into thin bite-sized strips

2 medium tomatoes, cut into wedges, then cut in half

1/2 cup sliced Greek olives or black olives

2 tsp. dried basil leaves

6 oz. feta cheese, crumbled (1 1/2 cups)

DRESSING

2/3 cup extra virgin olive oil

1/4 cup red wine vinegar

2 Tbsp. grated Parmesan cheese

1/4 tsp. dried oregano leaves

1/2 tsp. salt

1/4 tsp. pepper

1 clove garlic, finely chopped

Makes 10 servings

Directions:

In a food processor or blender, place all dressing ingredients. Cover; blend on medium speed about 20 seconds or until smooth; set aside.

Cook and drain pasta as directed on package. Rinse with cold water to cool; drain.

In a 4-quart bowl, place pasta and remaining salad ingredients. Add dressing; toss gently. Serve immediately.

Make Ahead: Pasta recipe can be prepared 1 day ahead of time. Cover and refrigerate before adding dressing. Add dressing right before serving and toss gently.
