This fun and easy jello parfait is perfect for kids both young and old.
The berry parfait will please anyone at your party with its sweet pudding filling and satisfying fruit.
Your guests may just feel guilty eating it, but, have no fear, because this parfait recipe is a healthy dessert with only 200 calories and 3 grams of fat per serving.
Prep 10 min. Cook 10 min. Chill 6 hr.
Ingredients:
FILLING -
2 cups low-fat (1%) milk
1 large egg yolk
3 Tbsp. cornstarch
1/3 cup sugar
2 tsp. vanilla extract
1/2 Tbsp. unsalted butter
Pinch of salt
GELATIN -
1 (6 oz.) pkg. red instant gelatin
1 cup mixed fresh berries (such as blueberries, blackberries, raspberries and/or strawberries)
Makes 8 servings
Directions:
Make Pudding: In a medium bowl, whisk 1/2 cup milk, cornstarch and egg yolk until smooth. In a pan, stir 1 1/2 cup milk, salt and sugar. Bring to a boil over medium-high heat, stirring until sugar dissolves. Remove from heat. Whisking yolk mixture constantly, then drizzle in hot milk.
Pour mixture back in pan and cook for 1 min., stirring constantly as filling thickens. Remove from heat; whisk in vanilla and butter. Pour filling into a large bowl; cover with plastic wrap so that plastic touches surface of filling. Let cool for 20 min., then refrigerate until cold, about 3 hours.
Chill 8 (4 oz.) dessert cups.
Make Gelatin: In a medium bowl, whisk gelatin and 1 cup boiling water until gelatin dissolves, about 2 min. Stir in 1 cup cold water. Keep at room temperature.
Assemble Parfaits: Fill each dessert cup about 1/4 with gelatin. Chill until firm; about 1 hour. Spoon in layer of filling over gelatin; smooth tops and freeze until firm, about 1 hour. Slowly pour in another layer gelatin; chill until firm, 1 hour. Top with final layer of filling. Divide berries among parfaits and serve or chill until ready to serve.
