Who would have thought preparing a spread on the grill would be such a hit! It can also be prepared year-round in the oven.
Prep/Total 10 min.
Ingredients:
36 square crackers (we recommend Triscuit)
3/4 cup reduced-fat cream cheese
1 Tbsp. orange marmalade
1 Tbsp. chopped fresh chives
Makes 12 servings, 3 crackers with spread each
Prep 5 min. Total 15 min.
Ingredients:
1 (8 oz.) pkg. Neufchatel Cheese
1 plum tomato, chopped
1/4 cup pesto
1/4 cup shredded five cheese blend
Serve with square crackers
Makes 12 servings, 2 tbsp. spread/6 crackers each
Healthy substitutes: Make with reduced-fat Neufchatel cheese, low-fat cheese blend and reduced-fat and/or low-sodium crackers.
Directions:
Heat grill to medium heat. Place unwrapped Neufchatel cheese on 8-inch square sheet of heavy-duty foil; top with pesto, tomatoes and shredded cheese.
Place foil on grill; cover with lid. Grill 8 to 10 min. or until shredded cheese is melted and Neufchatel cheese is softened but still holding shape.
Transfer foil to platter. Serve spread with crackers.
Oven Directions:
Prepare as above and bake in oven at 375 degrees Fahrenheit for 12 to 14 min. or until shredded cheese is melted and Neufchatel cheese is softened but still holding shape!
