Bruschetta is a traditional Italian appetizer, loved by many.
A Bruschetta recipe usually consists of a few flavorful ingredients on toasted bread.
You may find that our bruschetta appetizers are mostly made with tomatoes, which isn't surprising since they are a main ingredient in Italian style food!
Prep 20 min. Total 1 hour 20 min.
Ingredients:
3 large tomatoes, seeded and chopped
1 loaf Italian or French bread, toasted
2 Tbsp. chopped fresh parsley
2 Tbsp. chopped fresh chives
2 cloves garlic, minced
4 Tbsp. minced fresh basil
1/3 cup extra virgin olive oil
Makes 16 servings
Directions:
Combine tomatoes, parsley, chives, garlic, basil and olive oil in a medium bowl; stir until well blended. Cover and refrigerate for at least 1 hour, allowing flavors to set before serving.
Serve with toasted bread slices.

Ingredients:
1 loaf Italian or French bread, toasted
1 (8 oz.) tub sour cream
1/4 cup chopped mushrooms
1/4 cup chopped sun-dried tomatoes
1 (8 oz.) pkg. ricotta cheese
1 (1.2 oz.) envelope vegetable soup mix
1 cup mozzarella cheese
May use chopped fresh basil or chives for seasoning
Makes 16 servings
Healthy substitutes: Make with low-fat mozzarella cheese
Directions:
Preheat oven to 350 degrees Fahrenheit. Lightly grease an 8x8x2-inch baking dish. Set aside.
Combine sour cream, ricotta cheese and soup mix in a medium bowl; add 1/2 cup of the mozzarella cheese, mushrooms and tomatoes; stir until well blended.
Spread mixture evenly in prepared baking dish. Sprinkle with remaining 1/2 cup mozzarella cheese. Bake, uncovered, about 30 min. or until heated through.
Serve with toasted bread slices. Top with basil or chives, if desired.
Prep 20 min. Total 27 min.
Ingredients:
3 plum tomatoes, chopped
1/4 cup grated parmesan cheese
2 green onions, chopped
2 Tbsp. chopped fresh basil
2 Tbsp. Italian dressing
1/2 tsp. minced garlic
36 Crackers (round or square)
Makes 18 servings, 2 crackers each
Healthy substitutes: Make with Light Italian dressing and reduced-fat crackers
Directions:
Heat oven to 400 degrees Fahrenheit. Combine all ingredients except crackers in a medium bowl, stir until well blended; spoon onto crackers.
Place on baking sheet.
Bake 5 to 7 min. or until hot. Serve warm.
